Now....gals....i know some of u love to cook....so i thought we would share some recipes....men can join to:applause:





Now since we all come from different places...with unique cuisine.....i will start with a favorite dish i love an wish is easy to cook...



we call it...Githeri which is basically a combination of Dry Maize & Beans....one can opt to use the young maize...thats not dried...easier for those who have sensitive teeth:ROFL:



Ingredients (4 servings)



� pound dried red beans

1 pound dried maize (corn)

3 medium onions, chopped

4 medium tomatoes,chopped

1 tbsp vegetable oil

Salt



Cover the red beans and maize with water and soak overnight. Drain.

Cover again with water, add salt to taste and boil for 2� hours or until the maize and beans are soft.

Drain and set aside.



Fry the onions in the vegetable oil until golden brown.

Mix in the tomatoes an let it cook till soft.

Mix in the maize and beans and simmer for 5 minutes before serving.



Now...different people will add more different ingredients...like i would add chopped potatoes after the tomatoes are cooked....plus pour in some greens...like kale..spinash...right after the dish is about to cook fully...this will prevent the veggies from overcookin:dunce:



Serve hot with some home made juice...



Enjoy:applause:



Plus....some curry powder...or spices....

That recipe sounds great. Ironically, even though the amount of maize that is grown in the US is huge compared to sweet corn, it�s almost impossible to find. I�d love to try it sometime.

Cool Nkatty, thanks for sharing! Sounds delicious!

The only thing which I can cook is very simple to make. Take any kind of meat, put it in the oven with salt, pepper, garlic powder and cumin. Let it cook for 60 minutes, then eat with rice and salad-which is just tomatoes and cucumbers chopped up. :) Very simple cooking.

Your dish sounds alot yummier. I should try it some day!

Ok..am lost on the sweet corn part cobbler..lol...i knw corn is maize but hav never heard of sweet corn.maize is one of the staple foods here...we do lots of things with it...since there is plenty.

Ur welcome live.the meat in the oven with rice sounds great...here i would normally make soup instead of salad with onions,tomatoes,greans an potatoes with spices.

Nkatty, normally maize has a hard kernel and when you look at it while it is on the cob it looks like it�s �dented�, which is why in the US it�s called dent corn. Sweet corn is very soft and sugary. If you cooked sweet corn for about 2 hours, you would have nothing left but mush. We like it because you can cook it in just a few minutes and eat it right off the cob. Sweet corn is a type of corn that is mostly found in North America. The maize that you speak of is found throughout most of the rest of the world, and is a staple food everywhere.



It�s not that I couldn�t find maize here, like I said we grow way more of it here than sweet corn, it�s just that most people don�t eat it unless it has been processed into something else first. If I lived in the Midwest where it was grown, I could buy it from a farmer.



I was just thinking, I could use hominy, which is maize that has been cooked and had the husk removed. I would just put it in with the beans for the last 30 minutes or so.

Thanks for explainin cobler...u can use the hominy...i bet u can find canned beans thats cooked..by the way...u have made me start cravin for boiled maize...an roasted...sprinkled with lemon an dried(finely ground) red pepper.

Ice water - this one requires some forethought



1. fill ice cube tray with water and place in the freezer (this step is critical)

2. Allow water to freeze into individual cubes.

3. Once frozen remove cubes from tray into separate container usually using a twisting motion.

4. Fill a glass with water but not all the way to the top as the ice will displace the water.

5. Add one or more cubes to desired coldness.

6. Enjoy

ok I'll add a real recipe. lol to think I took 6 steps to describe making a glass of ice water :ROFL:



Ok this one is for Spanish Rice.

Writing this from memory but I've made this so many times I don't even use a recipe so we should be good.





What you need is the following

-A large pot

-A skillet to brown the meat

-measuring cups and spoons

-cooking spoon and spatula for meat (obviously)

-2 cups of rice (I use standard white short grain)

-2 cans (14 oz) of vegetable broth (usually use swanson)

-2 cans (14 oz) of dice tomatoes with green chillies (I usually use Red God brand)

- 3 1/2 oz of water

- Olive oil

- 4 cloves worth of minced garlic

- 1 pound of hamburger or ground turkey

- 1 tablespoon of light soy sauce (you can use reg)

- 1 tablespoon of Teriyaki

- 1/4 cup of parsley (I use flakes can use fresh)

- 1/4 cup of cilantro (I use flakes can use fresh)

- 1/4 cup of parmesan cheese



(optional)

- heaping 1/2 teaspoon of Dave's Insanity sauce, can use any hot sauce, or fresh hot peppers to your liking.



First if the ground beef or turkey is frozen I go ahead and stick that in the microwave to defrost.



Start out by pouring the olive oil in the pot and putting in the minced garlic. Turn the heat on high and stir till it starts to brown a little and begins to pop a little. I have the water measured out and handy to pour in as soon as the garlic is going good. Then I add the dice tomatoes. And the vegetable broth (I actually pour the broth into the tomato cans to get all the tomato contents out. Add the 2 cups of rice, Soy sauce, teriyaki, and hot sauce/peppers. Bring to a boil. While the pot is coming to a boil stir occasionally and Now I work on browning the ground beef/turkey if not already done. By the time the meat is browned the pot should be boiling. Add the meat to the pot, continue to stir occasionally. You can' turn the heat down if you want, I usually leave it at high till the rice starts to absorb the liquid. Once it begins to thicken and most of the liquid has absorbed turn off the heat and stir in the parsley, cilantro, and parmesan cheese. Allow to cool some before serving and enjoy :eat:

Ahhh the spanish dish sound similar to another thats common here...we call it 'pilau'....the meat is placed before the water an rice though...plus after garlic one adds the spices an tomatoes..then meat...water an finally rice.i had thought makin was simple till i saw the six step recipe...lolesttt.thanks mike:applause:
