I have recently graduated from ' Rice-a-Roni' to experimenting with making my own rice with various spices and vegetables. I can't seem to get the rice to come out right. I am guessing the rice-a-roni is pre-cooked and dried? Anyway my rice comes out kinda tough, not real fluffy like I like it. I am using brown long grain organic rice, does that make a difference? Suggestions please....

PS ...anyone have some really good recipes for rice dishes???

2sp..I am Bahamian and can make rice in my sleep lol..I use Mahatma long grain rice, 2 cups of water for 1 cup of rice. You let the water boil add rice and then immediately turn the stove down to med heat until almost all of the water has boiled out. Then turn the stove down to med low and make sure that the lid is tight use foil to ensure that it is and then let the rice cook for another 15 to 20 minutes. You can use a fork to stir rice but never a spoon.



If all else fails you can use Uncle Bens rice.....You cannot mess it up

2SP: When you say you are "making your own" rice I am assuming you are buying it in a bag -- and not growing it in paddies?

Brown rice takes way longer to cook than other rice. Have you tried a rice cooker? Though some have mixed results with using one for brown rice.

Are you looking for recipies that are vegetarian? Side dishes? Casseroles?

Bahamian Peas and Rice recipe





:

�� a large onion

�� a sweet pepper

�1 stick celery (optional)

�1 tsp dried thyme or sprig of fresh thyme

�2 tbsp tomato paste

�1 tsp browning (optional)

�1 large can of pigeon peas (preferably in coconut milk)

�Rice (long grain white rice)

�Salt (add to taste)

�Vegetable oil



Method:

1.Chop the onion, sweet pepper and celery (if using).

2.Heat up the oil and fry together the onion, sweet pepper and celery along with the thyme.

3.Add the tomato paste to the pot and stir the ingredients together add salt (to taste) and the browning if using.

4.Add the pigeon peas and stir well, add 2 cups of water and bring to the boil. Finish seasoning to taste at this point.

5.Add the rice until it is about an inch and a half below the water line.

6.Stir well, drop the stove to medium and leave the cover off. The pot should be simmering gently.

7.Stir at regular intervals.

8.When the rice has absorbed most of the water, turn the stove to medium-low, cover the pot, and leave to steam until fully cooked.

Hi 2sparrows,how about starting a thread about cooking different recipe from various places.About cooking rice,When you are using a rice cooker 1 cup rice/1 cup water but for brown rice that takes longer to cook the ratio should be 2cups of water /1 cup of rice.you can't mess it up using the rice cooker.it;s how I cook my rice here in the Philippines where we eat rice everyday.

Thank you ladies, I did not know brown rice took longer to cook; that could explain it.

@Godslamb Lol...no no not growing my own rice (yet). As a teenager I did work for a farmer who grew rice. But it is so cheap to buy it is hardly worth growing.

@cmseeker, What is a rice cooker? Thought you just used a pot. It would be great to have a recipe thread of foods from all over the world!

@DEEDEE, what is browning? Do you cook the rice seperate then add the peas over the top or do you add the rice and water to the cooked peas/oil etc then cook? I will try this recipe (sounds good..thanks) but doubt I can find peas in coconut milk, so might have to substitute with regular peas.

2 sparrows I'm sure you would ask that.You guys from the west don't eat a lot of rice that's why you're not familiar to it.It's an electric cooker that you can just wash the rice put water in it plug it down and it will do its job cooking your rice.I'm sure you can find one there too.

2sparrows-the difference between Rice-a-Roni and real rice is probably that Rice-a-roni is instant rice. You can buy instant brown rice, but it isn't as good for you.



I'm not the perfect rice cooker, but the main thing to remember is to get the water boiling before putting the rice in, and then putting a lid on it and turning the heat way down. I'm pretty sure you can get a rice cooker at Walmart if you want one. I still use a pot.

you can use Kitchen Bouquet. It is in he sae isle with as tabasco and ketchup. You add the peas to the rice while it is cooking..You can use Lima beans or corn..If you grocery store has a ethnic section. They will have Goya pigeon beans. There are bron or green peas....In the Bahamas we eat rice almost daily also a million differnt way.



Peas n rice

okra n rice

corn n rice

bean n rice

black eye peas n rice

pumpkin n rice

Mr.Sparrows, I use to hate rice until I went to Shoguns once and tried some fried rice. I like it so much I got their recipe:



Prepare your rice on the stove top using DeeDee's or CMSeeker's methods:

Saute sweet onions, bell peppers, or whatever veggies you like

Fry (or scramble)2 eggs and chop them up

In a large skillet or woc, on medium heat, add rice and stir and fold with a large spoon (or fork), add your stir fried veggies and eggs, add soy sauce to taste, remove from heat. Bon app�ti t!:eat:

And no, chopsticks aren't required!
